I feel your pain. I used to do that regularly. Not anymore. I found a utube video with a technique to join the ends of bindings on the bias. I WAS joining them on the bias. Not sure if it's the same technique you are referring to, but it's putting the ends together at right angles to each other and sewing diagonally from corner to corner, then cutting off the two unneeded triangles. If you aren't careful which way you put the ends together you get a twist in one end.
