Hummm...sure, why not? The tomato juice does have some natural sugars in it, so you might turn down the heat a little when you are cooking them so that they don't burn. You could also add chili powder, turmeric, mushroom powder, various herbs and spices for different colors and flavors. You may need to adjust the amount of water if you add any of these.
