WHen I had a similar large area in a log cabin quilt with a horse them, I created a horse medallion using a dinner plate and smaller paper plate, then drew the profile of a horse. You might choose a theme that fits the quilt or the recipient. Quilt in dark blue if you're not confident, or a contrasting color if you are.
