I have done both pieced backs and a few whole cloth wide backs, and I have to say when it comes to quilting (on a DSM), the fewer seams on the back the better. Besides the added thickness where front seams cross back seams, having a lot of seams adds weight and drag to the quilt and they can hang up when they cross the edge of your table.
