Here's my HO ... How about starting each square/rectangle by echo quilting just inside the seam (or you could start SID), and then continue with a square-spiral to the middle, tie off and then go to the next ...
Color-wise, I recently heard to use a gray if in doubt. You could use a monofilament thread as well.
