Jelly roll race quilt was what first popped into my head. Jenny at MSQC has a tutorial on it. Quick and easy. Or, as mentioned, a panel quilt would be fast and easy...plus you could pick out a cool panel to inspire hope, maybe. Sorry to hear of your family struggles.
