Did I ever post my zero-point chili recipe? I don't think I did, but pardon if I'm repeating myself.
Cooked, Shredded Chicken Breast (I use about 2/3 of a quart-size baggie full of Costco's pre-packaged rotisserie chicken)
15oz Can of Tomato Sauce
15oz Can of Fat-Free Pinto Beans
15oz Can of Fat-Free Refried Beans
About 1/3 of a Can of Water
1 Tsp Garlic Powder
1 Tbsp Paprika
1 Tbsp Chili Powder (can use reduced salt variety if desired)
1 Tbsp Ground Cumin
1.5 Tsp Ground Oregano
Mix the canned ingredients, water, and spices together thoroughly, then stir in the chicken. I let mine cook in a crock pot for 2-3 hours. Divide into 7 individual one-cup servings, let cool, then freeze. I put a cup in the fridge to thaw the night before, so it'll be ready to eat the following day. This isn't a spicy chili, but it's very flavorful and thick. You could add more spices or onions or peppers if you want.
