As others have said, Judy paper piecing and traditional paper piecing are exactly the same; Judy N just makes sure that instructors are good at explaining the process.

I looked up your LQS, and it looks amazing! There are Judy Neimeyer patterns that are complex, but also some that are relatively simple. Since they're using a simple pattern, and doing it over two full days, I think it would be an excellent way to learn paper piecing.

I learned paper piecing at a 2-day retreat, where we made Judy N's Autumn Harvest quilt. Everyone had their tops largely finished, even the ones who had spent years trying to wrap their heads around it before with no success. A good instructor, and time to work with them, make all the difference.
