Chick peas (garbanzo beans) are particularly nutritious. In the summer especially, I like to simply rinse the beans in a strainer under cold water, drain. Add a good amount of very thinly sliced red onion, some mayo, S&P and a little garlic and/or onion powder. Let sit for at least 2-3 hours. A great side. Fast, cheap, and keeps covered in frig for up to a week.
