Blueberry Onion Sauce for Pork
This is for 2 servings

2 Pork chops, with or with out bone
1 Tbs butter
1 Medium onion chopped in 1" or smaller pieces, the smaller pieces will cook faster
Salt and pepper to taste, I leave out because we do low sodium diets
1 Tbs sugar, I use maybe a tsp as I don't like it too sweet or leave it out altogether
1/2 Port ot Sherry wine
2 Tbs balsamic viengar
1 Cup blueberries washed and dried

Cook pork until browned and cooked through. Keep warm while you make the sauce.

Add butter to the pan add onions, salt, pepper and cook until onions are golden stirring occasionally. I usually brown any drippings that may be in the pan before adding onions.

After onions are brown, sprinkle sugar over them and cook to carmelize them

Add wine, balsamic vinegar, blueberries.

At this point, I usually thicken the sauce with a little cornstarch/water so it isn't so watery.

Place pork on plate, pour any drippings from the dish they were on into the blueberry mixture.

Pour blueberry mixture over pork and serve.

This is not a precise recipe. You can add/delete/change ingredients to fit what you like.
