Default Ideas for Pork Belly/Keto

I'm trying to support my hubby in his Keto diet plan. I'm diabetic on a high protein/low carb eating plan myself. My nutritionist says I can have around 100 carbs a day, I usually average more around 60-65, but hubby is under 30 and I'm not willing to go that low. He's always been a carnivore but I'm a former vegetarian and I love my fruits and veggies! I also tend to cook low fat with lean meats and don't typically fry foods so I'm a bit challenged with this style of eating. While I am a good cook I don't want to spend all my time cooking two different sets of food, we try to overlap so we can enjoy a meal together instead of just eating at the same time.

What the hubby has found is that he is rather challenged getting enough fat in his diet. He never liked avocados but has found that he likes the little cups of guacamole we get from Costco and has that as a dip with pork rinds. Recently we found another thing he likes, pecans toasted in ghee (again, both from Costco). That smells so good and is so delicious but too many calories for my eating plan.

This last Costco trip we got some pork belly. So far I've tried two things, both successful. The first was cutting it in small pieces (1" chunks) , sprinkle with Montreal seasoning and some extra garlic powder and cook on high heat (400) for 30 minutes, turn and then cook for another 15. That gives you crispy nuggets with most of the fat rendered out. The other thing was I left the pieces larger, marinated in soy sauce, and cooked the same way/time. That was also good, the fat wasn't so rendered out.

So now I'm out of ideas with several pounds of pork belly left! Anyone have any favorites for pork belly??
