This one has always served me well.
Gingerbread Cookies
3/4 c. Dark Brown Sugar
1/2 c. butter or margarine, softened
1/2 c. light molasses
1 egg
3 c. flour
3/4 t. ginger and cinnamon'1/2 t. salt
1/4 c. cloves
Cream butter and brown sugar. Beat in molasses then egg. Add remaining ingredients and mix to blend. Divide dough in half; wrap in plastic wrap and pat into 1" thick rounds. Refrigerate until firm enouh to roll; 3 hrs. or longer.
Heat oven to 350 Roll dough 1/8-1/4 " thick on a floured surface. Cut into desered shapes with a 3' cookie cutter. Place 1" apart on ungreased cookie sheets. Bake 9-12 min. until firm and slightly browned round edges. Remove to wire rack to cool. Makes about 4 doz.
##I found that the 1/8" are quite likely to burn, so have always cut 1/4".
##I use most any cookie cutter and they turn out fine.
