Default need help making a paper piecing pattern

I am making a quilt from an actual antique quilt that has blocks that are quite complicated and have lots of points like New York Beauties. It looks like paper piecing would be the best assembly technique. Does anyone know of a good reference (book or you tube etc) where I could learn to make my own paper piecing patterns? I can surely draw and trace, but knowing which order to place the fabric on which segment seems a bit tricky. Surely there is a method to the madness. Can anyone point me in the right direction to a great reference? Thanks!
