As long as real sugar is mixed with any dry sweetener it will work in baking. Sugar is needed to get the right texture. Did you know mixing 1/2 cup sugar and 1/2 cup of sweetener equals the sweetness of 2 cups sugar? That's why the blends calls for lot less to use. I prefer Monk Fruit or the new Swerve. Swerve has the best sugar taste of any I have tried. If you cannot have sugar I would suggest you try Swerve. My diabetic friend said it changed her food life. There are several new sweeteners on the market now, one called Ever Sweet which I was told is fermented stevia leaves and tastes just like cane sugar. I haven't tried that yet.
