There is no reason you can't make an Arkansas crossroads using 2 1/2 HST. Your squares would also need to be this size. You can also make something using the shaded 9 patch block (aka split 9 patch) Here are some ideas for you. https://www.google.com/search?q=shad...iw=885&bih=732

I made this quilt using unfinished size HST of 2 1/2" but you would have to make more to make one as big as this. It contains 1,152 HST. This is not Arkansas crossroads though.
