Pea Salad with Jicama, curry & almonds
Earlier I posted about Jicama Slaw and there were a few members who said they loved Jicama. I thought I would share the first recipe I ever used that introduced me to Jicama. (it reminds me a little bit of water chestnuts) It was from a 5-9 a day for better health article years back.
Serves 4
2 cups thawed petit peas
1 cup peeled and chopped jicama
1 heaping tablespoon finely chopped purple onion
2 tablespoons roughly chopped toasted almonds
1/4 cup light mayonnaise (I just use regular Miracle Whip)
1/4 cup nonfat plain yogurt (I use regular)
1 tsp mild curry powder
pinch cayenne
1/4 tsp salt
1/4 tsp pepper
1. Place thawed peas, jicama, onions and almonds in a bowl.
2. Combine the mayo, yogurt, curry, cayenne, salt & pepper. Add to veggies and mix well. Yummy!
