Boil the eggs, then immediately put them in ice cold water....drain and add more ice water. Crack the shells by shaking the pan. Change the water again, if needed. Peel immediately. Another technique I saw was to fill a tall glass half way with ice water place your egg in the glass, cover the top of the glass with your hand and shake, shake, shake for about ten seconds......drain the water and the egg has almost peeled itself.
