Sew them together with 1/4 inch seam to make your 2 and 1/4 inch binding and iron the seam allowance to the scrap fabric. The extra seam will be inside of the binding on the back and you can sew the binding on the front and hand stitch to the back. I believe I have seen this referred to as "Flange Binding".
