I was thinking the same thing as Anniedeb. Grate up (or small dice) a bunch of those potatoes and freeze them in layers on large sheets. Then put into large gallon sized freezer bags. Now you have hash browns ready to go. If you bake them or partially cook them before grating or dicing, cooking them up will be even easier. These can also be used for those cheesy creamy breakfast casseroles, too!

I've never done this, but what about making and freezing mashed potatoes? Can mashed potatoes be frozen?
