Has anybody here tried eating thistle? My grandson turned me on to it when he was a cub scout. Right before it blooms, cut the stalk and peel it. It's hollow inside. It taste like celery, only without the strings. I think it's delicious!
I didn't know that...great tip! It makes sense, since artichokes and cardoons are both in the thistle family. My husband will be happy to know that about the common thistle. He is obsessed with trying to get rid of them on our property. I'll have to do some research to see what kind we have and if it is edible.
