Many people braise (slow cook in liquid) their pork belly however, my hubby doesn't care for the texture.
But don't discard the fat. It can be used anywhere you might need some fat. I have even used such fat in chocolate cake. I "wash" it first if it has a lot of seasoning in it. Put in a kettle with a cup or more of water. Heat to boiling. Put it into the refrigerator until the fat has hardened. Poke a hole in the fat and drain the water. I sometimes do this twice. You will probably never get rid of all the spice taste, but that's why I use in Chocolate cake. The chocolate covers whatever taste is left in it.
