Those are pretty fabrics.
I think the homespuns (we used to call them "woven plaids") vary from fairly tightly woven - like "regular" quilting cotton to being very loosely woven.
I would overcast the edges, soak them in hot water to shrink them, and then gently wash and dry them before cutting.
