I posted a while back about my elderberry trees going off and asked for recipes, to which everyone kindly obliged. Unfortunately, those lovely birds that I so enjoy watching every morning ate every single berry before I had a chance to harvest them. So, I have have no experience with them yet.
I do know that some experts say that you need to make the syrup with the right kind of elderberries...the European ones, not the American ones. (Black Elderberries, vs. Red Elderberries perhaps?) Although, I have friends that make Black Elderberry syrup all the time with no ill effects. You can also buy it ready-made, often under the name "Sambucus nigra."
