Default Tofu Salad Sandwiches

The holidays are almost over and I think that my GI track will be happy about that.
This recipe is very similar to that classic tuna sandwich, but uses tofu instead. I like to use SUPER firm tofu, or Extra-firm tofu. Be sure to drain it well before adding to the bowl. The kelp powder is optional, but it does give a nice oceany flavor. I also didn't put exact amounts in this recipe, only the ingredients. Everyone likes their tuna sammies a little different, so adjust it how you like it.

Combine in a medium bowl:
Tofu, cut into 1/4 - 1/2 inch cubes
Veganaise, or home-made, non-fat vegan mayo
finely chopped onion
finely chopped celery
juice of 1/2 lemon
1/4-1/2 teaspoon dijon mustard
black salt (eggy salt, Kala namak)
pinch of kelp powder (optional)
pinch of turmeric (optional)
splash of hot sauce (optional)
and lightly season

Assemble:
Tofu mixture
Toasted, whole wheat bread
lettuce, or fresh spinach
sliced tomatoes

* This is also great with chao, or vegan cheese in it and grilled on the stove.
