I agree. It's really difficult to sew the binding to the back through that stitching.
There's only rules about quilts you're entering to be judged. I just sewed a 1" binding on a baby quilt and I
love how it turned out. It's a lot softer than regular binding, which can sometimes feel almost like a cord at the edge of the quilt.
