I sew right on the line, but I sew a little more at the beginning and a little more at the end and I trim and press after each peice. So before I fold the fabric over I fold the paper on that one line that I just sewed and use my add a quarter ruler and cut. than I use my iron with no steam and press I do not use freezer paper I buy a specialty paper piecing paper. (worth it!)
