I've pieced similar bindings before, do you press your seams open or flat? I go open and sometimes when/if I piece a binding (or when I make my french binding), depending on the fabric I'll use a .5" seam, just like when you piece a back, but I typically use thicker bindings than most people and cut them starting at 3".
I really wish I had gone for a wider than normal binding as I could have folded it over to the front a little further and not have had to deal with quite so many layers.
