Does she have any limitations to what she can eat as far as anything hard to chew for her as such? Make a roast in the crock pot and shred and that can be 2 or 3 meals. Make a baked potatoe and veggie. I make a roast and shred some of it put BBQ sauce in the crock pot and that is another meal. There are also many soups she may like and that can be frozen in a container for her to just pull out and heat up in the microwave. I think you are getting a lot of ideas on here too.
