I would go crazy paper piecing a LC, unless it was a small one. I did do that and enjoyed it but I don't really like to paper piece.
I cut the logs and haven't had a problem. I've made more LC than any other pattern.
Dunster, yours is gorgeous. I love the quilting pattern you used.
I also like to make them when I'm in a slump. It's mindless and fun.
