I don't think you will have much of a problem.
I did have a friend leave a quilt backed with minkee on her long arm frame for several months. The minkee, being a knit, stretched dreadfully. It was still usable (barely) but I had to take out all the half done stitching and turn the fabric 90 degrees before finishing it. The top on the other hand was just fine!
