I top stitch them down. I don't curve them. I stitch the pockets down before using the geese in a block. The last few I made I glue basted the pockets down and the LA didn't have a problem quilting right over them.
But doesn't that defeat the "one seam" advantage? You end up making 3 seams, whereas you'd only make two if you made your geese a more tradional way. Plus you'd have topstitching showing. (Just trying to understand what the advantage is with the folded one seam geese technique... I don't see any.)
