It depends. I do not pin basic pieces but as soon as I put together anything with matching seams, I pin on both sides of the seam. I learned that paying attention to pressing the seams in the correct orientation can help in block assembly - so that is where I also spend a lot of time. I love it when the seams "nest" because you can feel that the fit properly.
