How about Paradise Pear Jam? We love it and it makes a special gift during the holidays:

2 3/4 cups pears (about 2 lbs.)

1 small can crushed pineapple (8 1/2 oz)

1 orange

1 lemon

1/4 cup chopped maraschino cherries

1/2 cup finely chopped citron (I never add the citron)

5 cups sugar

1 box fruit pectin (powdered kind



Remove rinds from orange and lemon in quarters; discard half the white part on rinds. Slice rinds in slivers; chop orange and lemon coarsely, and discard seeds. Wash, peel and core pears, and grind (I dice the pears). Grind citron if using. Chop cherries coarsely. Combine all fruits including pineapple. Measure 4 1/2 cups of the mixture into a large pot. Measure sugar, set aside. Stir fruit pectin into fruit.

Sterilize 8 8-ounce jars and lids, wide mouth funnel and dipper.

Place fruit over high heat; stir until mixture comes to a hard boil. At once stir in sugar. Bring to a full rolling boil and boil hard for one minute, stirring constantly. Remove from heat; skim and stir for 5 minutes to cool slightly and prevent floating fruit. While skimming, remove jars and invert to drain. Fill jars . Place hot lids on jars and screw bands on tightly. Cool,l abel and store.
