I too love using the Pigma marking pens. The #3 or #5 work best for me. And the idea of sewing the label into the corner as part of the binding process is great - I do that sometime. My labels usually include the quilt name and/or pattern name, my first initial with last name, city, state, and month and year. I got some really cute fabric labels from Sweetwater. Otherwise I use a plain Kona or Bella white or cream fabric. My labels generally aren’t too big, which may be different from what others do.
