I never made borsht - but I have tasted it and liked it. We grew up with quite a few polish people who made Galumpkis. I would make them and hated trying to get the cabbage cooked enough to be able to roll. Gave up on that. Then we went to Klingers Tony Packos in Toledo Ohio. they had Hungarian Galumpkis. Fell in love with the taste. But again - no way will I take the time to roll them. So I throw all the ingredients in a pot and have stew!
I have made Galumpkis for as long as I can remember. My mother taught me as a kid on a single occasion and I was expected to make them for a family of 7 on request.
As an Adult I taught my kids to make them but I still remain the main maker of the Galumpkis. My kids are 1/2 polish. They did the Polish folk dances for years and learned enough of the language that they can get by understanding but not speak it. My MIL told me that the Galumpkis I made were as good as her own. So I passed the test early on.
