I cut this way also. I was taught that you “protect” the strip you’re cutting by covering it with the ruler. You can always salvage what’s under the ruler if you don’t move the ruler during a cut, then re-straighten your fabric edge. I don’t turn the fabric though. I spin the whole cutting mat.
