I don't know why this font is so large. I've made this cake three times last month and everyone enjoyed it.
Eggless, Milkless, Butterless Cake
Preheat oven to 325 degrees
1 cup Brown Sugar, firmly packed
1-1/2 cups Water
1/3 cup Vegetable Oil
2 cups Dark Raisins
2 teaspoons Cinnamon
1/2 teaspoon Ground Cloves
1/2 teaspoon Ground Nutmeg
1 teaspoon Baking Soda
1 teaspoon Salt
2 teaspoons Water
2 cups Flour
1 teaspoon Baking Powder
Combine sugar, water, oil, raisins, and spices in a saucepan. Boil for three minutes, stirring frequently. Take pan off heat and let cool for ten minutes. Dissolve baking soda and salt in two teaspoons of water. Add to raisin mixture (it will foam). Blend in the flour and baking powder. Mix well. Pour batter into a greased 9” square (or 8” round) pan and bake for 55 minutes, or until toothpick inserted in center comes out clean. Let cake cool for about ten minutes before removing from the pan.
Serves 10 to 12
Glaze Ingredients
1 cup Powdered Sugar
1 teaspoon Ground Cinnamon
1 teaspoon Vanilla
2 tablespoons Water
Combine all glaze ingredients in a small bowl and mix until smooth. Pour over cake after it has cooled completely.
