Have you considered a 4 patch posey? Basically, you line up 4 repeats of your fabric and cut squares of +1inch more than you want the re-sewn squares to finish at. So, if you want 8 inch squares, You would cut 9 inch squares. Then you use these squares any way you want to make a quilt. This Pinterest page has a lot of good examples....almost too many.

This is an excellent example of a four patch posey even if Robert Kaufman gave it another name and he doesn't cut squares, he has you cut an X across the corners. This one is even inspiring me to go out and cut some fabric. Florentine Fantasy Free Pattern: Robert Kaufman Fabric Company

Edited to add: I would leave some of the fabrics whole so that you could see the original pattern and how it changes with each different cut.
