I made the sourdough tortillas last night. They did not have much of a sourdough flavor...just a touch. The dough was left on the counter for about 3, or 4 hours before I made the tortillas. I may let them sit longer next time. Oddly, the texture was a little bit smoother and slightly moister than regular tortillas. They were nice. My hubby loved them and ate at least 10 small tortillas.
BTW...I also came across a recipe for sourdough flour tortillas. Pretty much the same idea as the corn ones. Just add some sourdough starter to the dough.
