If you use every square inch, you could get 160 2.5" x 3.5" pieces. You would cut 3.5" strips and then cut each into 2.5" pieces. This assumes that the WOF is a bit more than 40" (41" or 42") so you have a full 40" to cut. However I would not assume that you will get 160 pieces from a yard since you will need to square up your fabric after every few cuts. Perhaps count on 140 pieces from each yard but I'd buy more fabric than I need, just in case. I hope this helps.
