I have been looking for a good recipe for hummus for quite a while. Thanks for posting this one. I have several good Middle Eastern restaurants close to me and they sell hummus for a very reasonable cost. Each one of them makes the hummus a little bit different so I get a variety all the time, but I still want a good recipe that I can count on.
I use the canned chickpeas, rinse them and simmer in water with 1/4 tsp of baking soda for about 5 minutes to remove the skins. It does make them smoother. This is a good basic recipe that you can tweak for your tastes.
