The "do not use water" is mainly for the machine head that is painted and decals. The plated (chrome or nickel) metal pieces if able to remove from the machine head can be cleaned with water or polished with metal polish, but you don't want to do that with it attached. AND you want to be sure the pieces are completely dry before reinstalling. Sometimes the plating can be compromised and flaking so won't polished back to uniform color.
