He's finally retired but I had the same peach guy at the farmers market for the last 20 years. He always said that refrigeration killed the peach taste and that's why his were so good. Also why you had to use them immediately! When my son still lived at home we would go through close to a carton per week during peach season between fresh and cooked.

I'll have to pull out my recipe file, but I typically make things more like crumbles or cobblers than pies, and just cooked peaches/pie filling is great hot over vanilla ice cream or with a bit of whipped cream

Back in the old days, people canned. Today it is amazing what we can do with ziploc bags and the freezer! Especially when it is hot outside and the peaches are not holding up -- chunk them up and freeze them and deal with them on another day.
