I make peach pie filling in a jar. I like the recipe because it can literally be made a jar at a time. The original recipe calls for tapioca but I find Clear-jel works much better. But it can be hard to find in Canada. I just opened my last jar last night. It had been on my pantry shelf for 3 years and the peach crisp still tasted like I made it with fresh peaches.
