Default Over Ripe Bananas

What do you do with over ripe bananas? I know...banana bread, but what else? I stick them in the freezer when the skins start to get covered in brown spots. I like to use them as a base to make sorbets.

Berry Sorbet

1 ripe banana
3-4 cups of mixed berries (fresh, or frozen)
a small sprig of peppermint
sugar to taste

Blend it all up in the food processor and strain into a bowl. Put the bowl in the freezer to get the mixture nice and cold, then churn in your ice cream maker. You can also let it get semi-frozen in the bowl and then stir it up by hand every half hour, or so.
