I like your suggestion! If they are browning up they are probably sweeter than normal so not much extra sugar will be needed. What I do is throw them into a smoothie - frozen or not after they get brown. Or mush them to make fritters with them (fried bread bread dough mixed with fruit). I have frozen bananas waiting for me to make into banana bread and fritters when I am ready to deal with a hot stove again.
