It all sounds great to me. My problem is I don't have an oven at the moment. Just after having my kitchen remodeled which took 8 months to finish it due to lack of materials, my oven decides to take a hike. Still have my burners but no oven. Luckily I bought a Ninja Air Fryer to replace my toaster oven so I had that to use for baking pies, etc. Now I have an Instant Pot and finding all sorts of things I can use it for. It's just me and sometimes I just don't feel like making anything big just for myself. Winter time I have all my soups I made in the Fall and froze using produce from the garden but summer time is a hassle as who wants to cook when it's hot?
Your menu sounded great to me though.
