For either, you can adjust the herbs to your liking. Garlic, sea salt, parmesan, everything bagel, etc. I don't really have discard, only keep 20-25 g starter in the refrigerator - but do sometimes make extra starter specifically so I can make one of the many discard recipes, lol.
