If it's not a gel pen specifically designed for fabric, I would just make sure you try a scrap first? It's easier to write on the fabric if you back it with freezer paper (iron it on, there are tutorials if you've never done this) which is what I did for my 6yo. If you're going with the raw edge applique route, backing it with the fusible web should make it stiff enough for the writing to be easy
