To get an idea of what each will look like, something that is often done is to pull thread off the spool and spread over the quilt top. Not exactly like the finished product will be, but it does give you a good idea.

Choice is really personal.
Some want the quilting to stand out.
Some want it to do its job, but not be the star of the show!
A closer match on thread/fabric, will be more forgiving for any oopsies in the quilting. Contrast helps emphasize the work of your quilting. A subtle variegation in the thread can be quite effective too.

As above ... it really is your choice, as to what effect you really want.
